Jonathan Esquivel is a talented Mexican chef with an outstanding international career. Throughout his journey, he has honed his culinary skills in prestigious Michelin-starred restaurants across Spain, France, and Italy. His cuisine blends the richness of Mexican tradition with the techniques and elegance of European haute cuisine, creating unique and refined gastronomic experiences. His passion for high-quality ingredients, constant innovation, and respect for cultural authenticity have made him a rising figure in the global culinary scene.

Jonathan Lam – Founder & CEO
Jonathan Lam is an accomplished entrepreneur and Boatswain’s Mate in the U.S. Coast Guard Reserves, bringing over 30 years of experience in the food and hospitality industry. His culinary journey began at age 14 in his relative’s restaurant and grew through hands-on roles in various Southern Illinois restaurants while studying Interior Design.
After relocating to San Francisco in 1999, Jonathan apprenticed at ABC Bakery, launched Maple Forest Catering, and later earned a culinary degree from City College of San Francisco. His leadership roles included chef at Hilton Garden Inn and General Manager / Training Leader at Panda Express, where he helped open one of the first drive-thru locations in Marin City and earned multiple awards for excellence.
Jonathan also served as a Flight Purser for Cathay Pacific Airways, gaining global perspective on food, service and trading. In 2016, he founded Pegasus Bakery & Café, which earned the 2023 Business of the Year award from the Stockton Blvd Partnership.
Sky Port Restaurant and Bar is the culmination of his lifelong dedication to hospitality, blending his experiences from the culinary world, aviation, and the Coast Guard into a unique dining destination inspired by travel and service. Jonathan is committed to community growth and continues to expand his vision in Elk Grove, CA, with a focus on quality, safety, and guest experience.
